


This is the barley that was cut the morning of the 25th of February in the Negev. These photos I am posting are from the morning of the 27th of February. The random grain I checked is in the final stage of dough. It can still be barely divided by my thumb nail and there is a large amount of starch on the inside, very little moisture left. It would be a perfect example of what to roast by fire to complete the extraction of moisture from the grain. Notice how easily that barley shattered, or fell apart.Updated Feb 27, 2020, 7:37 AM
