It is still hot in the middle east and I really missed cold food. Here’s my answer. The leg meat of beef or any meat with a good amount of connective tissue season and cooked completely tender is a pressure cooker.

Store it covered in broth that cooked out of the meat until it cools. The flavored broth congealed and makes a cold delightful meat aspic.Sorry to make another post.
